Health Benefits of Kale

Kale is a green cruciferous leafy vegetable rich in fibre, vitamin C, iron and potassium. Foods rich in fibre and potassium help control blood pressure to an extent. Ms. Sushma Ghag, Dietitian at Aster Hospital, Mankhool, says: ‘Potassium is important in managing high blood pressure because it reduces the effects of sodium. Potassium is known to dilate blood vessels that prevent the muscles from tightening and the arterial walls from narrowing, hence allowing blood to flow freely and smoothly. The heart then doesn’t have to pump harder for the blood to flow, thus reducing high blood pressure. The anti-oxidants in kale have various benefits including anti-inflammatory properties and the essential nutrients to lower hypertension.’
